Vegetarian Burger

Ingredients:

     1 can white beans
     1 1/2 cupsbread crumbs
     1/3 t grated carrot
     1/3 t chopped onion
     1 egg
     3 tbs olive oil
     2 tbs fresh parsley chopped
     seasoning
     8 slices of crusty bread and toast
     1 cup spinach leaves
     tomatoes concasse

Preparation:

In a bowl, mash the beans and add half of the breadcrumbs, carrot, onion, egg, 1 tsp of oil, half parsley, seasoning and mix well all. Shape mixture of beans in four blocks.
In a bowl, mix the rest of the bread crumbs and parsley. Add the patties in the bread crumb mixture, turning to coat. In a large skillet, heat remaining oil hight heat. Add patties and cook for about 5 minutes.
When all ready, cover half of the bread slices with spinach garnish with a block. Drizzle with tomato sauce. Covering the rest of the slices of bread.

It is a good recipe to all vegetarian whom need to eat burger without meat......
